This dinner is a celebration of the exceptional produce from around the island. Indulge in food created with local ingredients and gin infused with native botanicals for a uniquely Tasmanian experience.
Start with Tasmanian scallop crudo with crimson pepper berry and soft herbs, paired with Ocean Gin featuring a blend of 12 botanicals, including wakame seaweed sourced from the Tasman Sea.
Then delight in Dasher + Fisher’s double gold award-winning Sloe Gin, crafted into an elegant Negroni and paired with cappocollo on fresh brioche with confit garlic.
The main course features fresh house made pasta filled with potato and ricotta, enjoyed with a martini crafted with eucalypt and green herb infused Mountain Gin.
Finally, finish with gin-soaked baba, pickled berry compote, whipped vanilla mascarpone and a Raspberry Gin fizz.
Tesoro Chef Glen Tilly and Dasher + Fisher Head Distiller Chloe Oppitz will be on hand during the evening, providing in-depth knowledge about the food and gin pairings to elevate your experience.
