Inspired by the majestic ancient cool temperate rain forests of lutruwita (Tasmania), our small distillery in the seaside town of Dover at latitude 43° South is the place where we handcraft a distinctive botanical spirit; in fact, a world first, Evoke! Using the byproduct molasses from sugar refining, derived from Australian-grown sugar cane as our alcohol base, we vapour distil the evocative oils from our famous native sassafras tree. This provides our central botanical flavour, which we complement with the native pepper bush and a couple of locally grown fruits.
Distiller Martin Wohlgemuth has spent close to a decade developing through the use of sustainable methods, this flavourful beverage that makes no apologies for putting the very essence of our rainforest front and centre of the stage, without trying to imitate other variations of fine botanical spirits.
The distillery in Dover is part of a restored historic bakehouse and home. For tastings of our unique spirit and to avoid disappointment we ask that you email or phone before visiting.
