The name “Sylvie” comes from the Latin word ‘silva’ meaning ‘forest’ and symbolises our deep appreciation for natural ingredients and the bounty of land and sea. Sylvie Hobart works closely with local fishermen and marine aquaculture as well as local growers and producers to source incredible and unique fresh ingredients of the highest quality.
