Callington Mill Distillery
Easily recognisable by its famous windmill facade built in 1837, there is now just as much to enjoy on the inside as there is to on the outside. Open Wednesday to Sunday 10am to 4pm, indulge in a fully immersive and unique single malt experience and follow it up with a Tasmanian food-journey at their on-site cellar door restaurant. They will also be hosting a special Whisky Week event on the 13th August so make sure to secure a ticket before they’re all gone.
Lark Distillery Co.
Back in 1992, Lark Distillery became the first Australian distillery to begin producing single-malt whisky in 154 years. Since then it’s gone from strength to strength and cemented itself in the history books as one of the top producers of whisky in Australia and around the world. While the awards and accolades Lark has amassed over the last 30 years are impressive, they’ve never strayed from keeping Tassie values and produce at their core of everything they do. With multiple venues dotted across the south, it’s a must-try when in the south.
McHenry Distillery
Located in Port Arthur on the tukana / Tasman Peninsula, McHenry Distillery is Australia’s southern-most whisky distillery. In honour of Tasmanian Whisky Week, free tours and tastings will be available at 1:30pm daily so don’t miss out.
Killara Distillery

You can also enjoy an after-work style drinks picnic held the second Friday of each month with live music and a food truck.
Sullivans Cove Distillery
Established in 1994, Sullivans Cove is the oldest commercial whisky distillery in Tasmania.
